REDFISH
(Sebastes Marinus/Sebastes Mantella)
THE RICHLY FLAVOURED FISH WITH THE BRIGHT RED COLOUR
Redfish/Ocean perch - 25-90 cm.
Redfish (Ocean perch) has an orange to reddish skin and a short, chubby shape. Rich in flavour, it has excellent eating qualities. In its frozen form it is widely accepted in export markets world-wide.
There are basically two main types of redfish available:
Sebastes marinus: mainly caught in coastal areas, pink and orange in colour.
Sebastes mantella: caught mainly at 800 - 1200 metres and with a deeper red colour.
Both types are highly appreciated for catering as well as for further processing into fillets, both skin-on and skinless. They are caught in the waters around Greenland, Iceland, the Faroe Islands and Newfoundland. The season is mainly from April to September depending, however, on where in the North Atlantic it is harvested. In Greenland, winter fishing also occurs.
