GREENLAND HALIBUT / GREENLAND TURBOT (Reinhardtius hippoglossoides)
A HIGH-FAT FLATFISH, PERFECT FOR SMOKING
Greenland halibut is caught in the cold, northern part of the Atlantic Ocean. The meat is snow-white with a high fat content and a rich flavour. This makes it very popular for sushi, sashimi and smoking. Greenland halibut lives at the bottom of the ocean at depths of 250-2000 metres where the temperature is ice-cold. Several forms of the product are available, primarily headed, gutted and tail-off. The fillets are mainly produced as skinless and boneless.
Greenland halibut / Greenland turbot (Reinhardtius hippoglossoides) 20-100 cm.
